A Northport restaurant popular with vegans, vegetarians and omnivores alike is expanding again, this time to incorporate a brand new grab-and-go, which will sell breakfast and lunch items, as well as organic coffee, cappuccinos and lattes, all for takeout.
The Purple Elephant Grab-and-Go, located in a separate storefront directly next door to the “whole clean cuisine” restaurant, is expected to open next month.
Owners Sam and Julia Liu are hoping the new space will offer a healthy option for time-crunched people on the go and those looking to slow down and grab a bite they can take home – or to a picnic table in nearby Northport Village park.
Visitors can expect bakery items and sandwiches, salads, and other lunch options, including vegan and gluten-free selections.
The grab-and-go is the most recent of many additions the Lius have made to the location since taking over nearly eight years ago. An expansion a few years back made room for more seating in the restaurant, and a weatherproofed outdoor patio can now accommodate diners in any season.
More interior renovations were completed in mid-January and include freshly painted walls and new flooring, giving the main space a brighter, more open feel.
“As a small, family-owned business, we're so very grateful for everyone's encouragement throughout the revamping of our dining (and soon, our food to-go) experiences,” reads a recent Purple Elephant social media post.
Sam and Julia are currently looking for a manager and coffee baristas; those interested in working at the grab-and-go can drop off a resume at the restaurant (81b Fort Salonga Road) or email info@thepurpleelephantny.com.
